Speculoos Cupcakes

When browsing the Internet for some new recipes, I suddenly noticed something. I've never come across an English/American speculoos recipe. I'm not sure if it's because speculoos is something typically European/Belgian or because it's just called differently in English. It might be comparable with ginger bread cookies or something, but I'm not sure since I've never had any. Anyway, if it is something exclusively European, I'd like to introduce non-Europeans to this deliciousness! It's not the traditional cookie, but these cupcakes are equally as good (maybe even better!). You find the recipe below:

Ingredients (makes more or less 6 cupcakes)

  • 125 g self-rising flour
  • 60 g brown sugar
  • 60 g granulated sugar
  • 2 eggs
  • 80 ml milk
  • 1,5 tbs speculoos spices
  • 75 g butter
  • 1 ts almond extract (depending on how strong it is)

Preparation

  1. Preheat the oven at 175°C.
  2. Heat the milk and butter over a low heat, until the butter is melted.
  3. In the meanwhile, mix the sugar, almond extract and eggs together until it starts to thicken.
  4. Mix in the flour and speculoos spices with the eggmixture. Alternate with the butter mixture. 
  5. Devide the mixture over the cupcake tray. Put in the oven for about 25 minutes.
