Chicken noodle soup.

Chicken noodle soup

Noodle soup is not really a thing we eat at our home. Chicken soup isn't either. I'm not sure why but we usually just ate tomato or vegetable soup. Noodles isn't a thing here, I suppose. Anyway, luckily there's such a thing called 'the Internet' and more specifically, Pinterest, which introduced me to noodle soup by showing me the most delicious photos of them. In fact, the pictures looked so good that I got curious and wanted to try it for myself. I've put it off for a long time because I thought it was probably too complicated but then the Boyfriend became really interested in making soups. Yeah, sounds weird but soup apparently is his favourite dish to make (at the moment). And there's only so much tomato soups you can make. So we decided to finally tackle the "complicated' noodle soup... and we discovered it's not complicated at all! On the contrary, it's easier than our 'regular' soups. In addition, my parents - who get to taste everything firsthand in exchange for the kitchen we may use - absolutely loved this dish as well. So much, that we already made another batch to put in the freezer, for those cold days during which you don't want to cook at all.


Ingredients

  • 3,5 l water + 7-8 chicken stock cubes (or 3,5 l fresh chicken stock)
  • 2-3 pieces of chicken (preferably chicken legs)
  • 2 carrots
  • 1 leek
  • 2 celery sticks
  • amount of noodles to your liking (I used mie, I believe)
  • 1 tbs tellofix (= powder of vegetable stock if I'm not mistaking)

Preparation

  1. Cook the chicken for about 20-30 minutes in boiling water or until fully cooked through. Once the chicken is done, take it out of the water and lay aside to cool off.
  2. Cut the vegetables into small pieces. Stove the celery and carrots first before adding the leek. 
  3. Add the water (tip: you can use the same water in which the chicken was boiling, it will give you more flavour) and chicken stock cubes (or the fresh chicken stock if you're using this) and let cook a little while.
  4. In the meantime, if your chicken has cooled off, you can cut the chicken into little pieces or tear the chicken apart by hand (that's what I love to do) and add it to the soup as well.
  5. Add the noodles to the soup and let cook until they're ready (see the package for the exact time).
  6. Finally, add seasoning to your liking. I added a tablespoon of tellofix to get the soup just right.
