Mushroom soup.

Seeing what happened this week, it seems weird posting a soup recipe. For myself, it's not just the events that happened in Brussels but some personal stuff that's been going on. I'm not going to bore you with the details, I think what happened in Brussels alone is enough to capture for the week. But all I have to say is: this week really sucked! Nonetheless, I'm still posting my mushroom soup recipe because it's just a really good one... And I think we can all use some comfort food this week. 

Ingredients

  • 750 g mushrooms
  • 1 onion
  • 3 chicken stock cubes (you can use vegetable as well)
  • 2 l water
  • pepper and salt

Preparation

  1. Cut the onion into small pieces and stove in your soup kettle.
  2. Clean the mushrooms and cut them into small pieces. Add them to the onion and let stove for at least 5 minutes. If desired, you can keep some pieces apart to add them as decoration to your soup later.
  3. Season with pepper and salt.
  4. Add the water and let simmer for about 15 minutes.
  5. Add the stock cubes and mix the soup with a mixer until smooth.
  6. Taste and see whether it needs more seasoning. Add the decorational mushrooms, if you want.
  7. You can also add a little bit of cream to the soup. I personally don't because I like the soup as is  but it's an option.
Enjoy the soup, cuddle up with your loved ones and give them a big hug. Tell them you love them and enjoy every minute of it.
